According to the old recipe, the pumpkin must be cut into large pieces and baked in the oven as tradition dictates.

• Remove the peel and mash it well, adding the cheese, crumbled amaretti biscuits and chopped mustard; add nutmeg and salt to taste. After mixing the mixture well, you need to let it rest in the cool overnight.
• To prepare the pastry you need to use the eggs and flour and cut strips about 7 centimeters wide.
• Thus, place a generous teaspoon of filling every 3 or 4 centimeters and fold the pastry, pressing well. Cut out the rectangles obtained and boil them in salted water for a few minutes.

Tortelli can be served with melted butter and sage or sprinkled with grated grana.

• Eggs 6
• Flour 6 hectares

For the filling
• Pumpkin 1 kg
• Grana Padano 500 gr
• Macaroons 300 gr
• Mantuan mustard 200 gr
• Salt, nutmeg as needed
